Green chutney boiled Egg sandwich
Boiled egg sandwich can be used as a perfect breakfast and dinner. Eggs are soft boiled with creamy yolks which almost melts your mouth. This can be an easy and filling recipe with less ingredients. For bread you can choose any of your choice like white bread or brown bread, multigrain etc. Egg sandwiches are packed with proteins, vitamins and lots of minerals and it is always an easy option for people who want to eat healthy, filling and nutritious.
However, please feel to use spreads of your choice. But here I would like to share Green Chutney Boiled Egg Sandwich because I can't forget the health benefits of coriander and mint. Even you can keep the chutney in refrigerator for 2 to 3 days.
Prep Time: 20 minutes
Cook time : 2 minutes
Servings: 3
Ingredients:
- 3 eggs( soft boiled)
- 6 slices bread
- 2 tablespoon unsalted butter
- Pomegranate ( optional)
Green Chutney:
- 12 to 14 mint leaves
- 1/2 cup coriander leaves
- 1 garlic clove
- 1 tablespoon lemon juice
- 1 green chilly
- 1 tablespoon coconut or 1/2 slice bread.
- 1/2 teaspoon cumin seed
- Salt to taste
Instructions:
- Add butter to bread pieces and toast in a toaster or a pan.
- To make spread add all the ingredients to a grinder and grind smoothly.
- Add 2 tablespoon of water and grind it until smooth.
- Do not add more water as we don't want a runny spread.
- Take a taste test and add more salt, lemon or chili as per your taste.
- Once chutney is ready spread the chutney on the bread .
- Slice egg into two and place it over the bread. Eggs can be soft or hard boiled depends on your choice.
- U can use pomegranate to garnish the dish.
- Green Chutney Egg sandwich is ready to serve.
